Mango Jam

Made Wednesday 23 March.

 

A few things I did wrong – doubled the recipe, which I think I should not have.  I’ve heard that jam is best made in small batches, and I think I will stick with that advice.    Secondly, I was a bit liberal with the orange juice and that made the whole thing take longer to reduce.  Third, I should have cut the mango into smaller cubes.

The end result is that I have a very sweet jam – it’s almost like a strong honey, flavored with mango and orange (and a hint of ginger).  It’s not the best, really, but it will get eaten.  I really need to improve my jam making.  Anyway, this is what it looks like, along with some sourdough bread I made on Tuesday.
